Christening cake for Frey

One of my colleagues had a son back in March and they asked me if I would make a cake for the party, which was here in August and so I made this cake:

The cake did have the boys full name on it, but since it is a very special name I have removed it on the picture for privacy reasons. It was my first attempt at making an elephant but I think it turned out really cute. I found a vidoe on YouTube and just followed the instructions in it.

The cake consists of 3 layers of vanilla cake (drømmekage), 1 layer of elderflower mousse but this time I had added white chocolate with lemon to it and 1 layer of strawberry and rhubarb mousse. It is coated with buttercream with elderflower juice and covered with homemade fondant. All decorations are also made with homemade fondant and then I used Royal Icing for the border around the cake.

Christening cake for Laura

My boss had a baby girl back in October and March 14th it was time for her christening and he asked me if I would make the cake for them. It has been a long time since I last made one, so I must say I am a bit out of practice but I accepted anyway. The cake was ordered to be for 35 people but due to the Corona virus they ended up being a lot less, so I think the top cake went into the freezer. Here's the cake which I think turned out really pretty:

The cake consisted of 2 layers of yellow cake (drømmekage med et twist) and 1 layer of chocolate cake. The mousses were Bailey's mousse and raspberry mousse and I covered the cakes with SMBC before I put the homemade fondant on. All the decorations are also made in fondant, so it is all edible.

Our New Years Eve dessert

Happy New Year.


For our dessert this year I decided that I wanted to try to glaze something, since I haven't tried that before, but I got very inspired to do so, but watching the Danish Christmas version of the Great Bake Off. So here it is our fancy dessert:
It was actually not so hard as I had imagined, only mistake I did, was not following the recipe, at least I figured out what to do to get it to work. Here is how the cake look inside:
The cake consisted of "kransekage" bottom, blackberry lchf fatbombs, lemon fromage and blackberry mousse and glaze.

Christmas goodies

These goodies I have made for Christmas every year for the last 6 years, and sometimes for other occassions as well. They are seriously addictive, so don't say I didn't warn you ;-).

Mortens 40th birthday card and cake

My colleague Morten turned 40 just before Easter so we all chipped in to buy him a present and I made the card to go with it:


I have used papers from Maja Designs "Denim & Friends" collection, and the picture I found on Google. I have used dies from Spellbinders - Matting Basics 6x6, Marianne Design - Numbers, Tattered Lace - Happy Birthday and Crealies - Stars. The halfpearls are from my stash.

Since I also make cakes from time to time Morten had booked me to make a cake for his colleagues, so for once I actually got to taste the finished cake :-). Morten designed the graphics for the cake, so it was pretty easy for me. He was not happy about turning 40 - it made him feel old - hence the wheel chair.

The cake consists of 3 layers of chocolate cake, 1 layer of raspberrymousse and one layer of chocolatemousse. The cake is covered with Baileys butterfrosting before covered with homemade fondant.
